Broth

Method

Preparation

  1. 1

    Prepare the Ingredients

Dice the bell peppers, onion, and celery. Mince the garlic cloves. Slice the alligator sausage and shred the smoked chicken. Set aside.

Cooking

  1. 2

    Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add the diced bell peppers, onion, and celery. Sauté for about 5-7 minutes until softened.

  2. 3

    Add Garlic and Sausage

Stir in the minced garlic and sliced alligator sausage. Cook for another 2-3 minutes until the garlic is fragrant.

  3. 4

    Create the Broth

Add the chicken broth, canned diced tomatoes, tomato paste, Cajun seasoning, garlic powder, onion powder, bay leaves, salt, and black pepper to the pot. Stir well to combine.

  4. 5

    Simmer the Broth

Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld together.

  5. 6

    Add Rice and Proteins

Stir in the peppered white rice, shredded smoked chicken, shrimp, and crawfish tails. Mix well to ensure the rice is evenly distributed.

  6. 7

    Cook the Jambalaya

Cover the pot and let it cook on low heat for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid.

  7. 8

    Finish and Serve

Remove the bay leaves, stir in chopped fresh parsley, and adjust seasoning if needed. Serve hot with bread on the side.
