Fried Oysters

    Prepare the Oysters

    Shuck the fresh oysters and place them in a bowl. Rinse and drain well.

    Make the Batter

    In a separate bowl, whisk together eggs and milk until smooth. In another bowl, combine flour, cornmeal, and Cajun seasoning.

    Coat the Oysters

    Dip each oyster into the egg mixture, then dredge in the flour mixture to coat evenly.

    Fry the Oysters

    Heat vegetable oil in a deep skillet over medium-high heat. Fry the oysters in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

    Prepare the Bread

    Slice the French bread loaves lengthwise but do not cut all the way through.

    Layer the fried oysters onto the bottom half of the bread. Top with lettuce, sliced tomato, and drizzle generously with remoulade sauce.

    Close the sandwich and press down gently to hold the filling together.

    Wash and peel the potatoes. Cut them into fry shapes.
