Calamari Preparation

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Create the Batter

    In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Whisk together until evenly mixed.

    Soak in Buttermilk

    Pour the buttermilk over the calamari rings in a separate bowl and let them soak for at least 30 minutes.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture, coating them evenly.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Cook the Sauce

    Add the canned crushed tomatoes, dried oregano, salt, black pepper, sugar, and chopped basil. Stir to combine and let simmer for 15-20 minutes, stirring occasionally.

Serving

    Plate the Calamari

    Transfer the fried calamari to a serving plate. Serve hot with marinara sauce on the side and lemon wedges for squeezing over the calamari.
