Crispy Calamari

Method

Crispy Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Make the Batter

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

  3. 3

    Prepare the Buttermilk Mixture

In a separate bowl, whisk together the buttermilk and the egg until well combined.

  4. 4

    Coat the Calamari

Dip each calamari ring in the buttermilk mixture, allowing excess to drip off, then dredge in the flour mixture until well coated.

  5. 5

    Heat the Oil

In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Fry the Calamari

Fry the coated calamari in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

  7. 7

    Serve

Serve the crispy calamari hot with the spicy aioli on the side.

Spicy Aioli

  1. 8

    Combine Ingredients

In a mixing bowl, combine the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt. Mix until smooth.

  2. 9

    Adjust Seasoning

Taste the aioli and adjust the salt or sriracha sauce to your preference for spiciness.

  3. 10

    Chill

Refrigerate the aioli for at least 30 minutes before serving to allow the flavors to meld.
