Method

Short Ribs Preparation

    Season the Ribs

    Pat the boneless short ribs dry with paper towels. Season both sides with salt and black pepper.

    Brown the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Add the short ribs and brown on all sides, about 4-5 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrot, celery, and garlic. Sauté until softened, about 5-7 minutes.

    Add Liquids

    Pour in the beef broth and red wine, scraping the bottom of the pot to release any browned bits. Stir in Worcestershire sauce, thyme, and bay leaves.

    Combine and Cook

    Return the short ribs to the pot, cover, and reduce heat to low. Simmer for 2-3 hours until the meat is tender.

Demi Glace Preparation

    Prepare the Demi Glace

    In a saucepan, combine beef stock, red wine, and shallots. Simmer until reduced by half, about 15-20 minutes. Strain and return to heat.

    Finish with Butter

    Whisk in butter until melted and smooth. Keep warm until serving.

Red Whipped Potatoes Preparation

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add cubed red potatoes and cook until tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return to the pot. Add butter, milk, salt, and pepper. Mash until creamy and well combined.

Creole Kale Preparation

    Sauté the Kale

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Kale and Seasoning

    Add chopped kale and Creole seasoning. Sauté until the kale is wilted, about 5-7 minutes.

    Finish with Lemon Juice

    Remove from heat and stir in lemon juice and salt to taste.
