Pasta Preparation

Cook the Pasta
In a large pot, bring salted water to a boil. Add 8 cups of elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Crawfish Mixture

Sauté Crawfish Mixture
In a skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sliced green onions, sauté for 2-3 minutes until fragrant. Add 1 pound of cooked crawfish tails, stir, and cook for an additional 2-3 minutes. Remove from heat and set aside.
Cheese Sauce

Prepare the Cheese Sauce
In a saucepan, melt 4 tablespoons of butter over medium heat. Whisk in 1 cup of all-purpose flour and cook for about 2 minutes until golden. Gradually whisk in 4 cups of milk, and bring to a simmer while continually whisking until thickened (about 5-7 minutes). Stir in 2 cups of cheddar cheese, 1 cup of Monterey Jack cheese, and 1 cup of Parmesan cheese until melted and smooth. Season with salt, black pepper, and paprika.

Combine Ingredients
In a large mixing bowl, combine the cooked macaroni, crawfish mixture, and cheese sauce. Stir until well combined.

Prepare for Baking
Preheat the oven to 350°F (175°C). Transfer the macaroni mixture to a greased baking dish.

Prepare Topping
In a small bowl, combine 1 cup of breadcrumbs with 2 tablespoons of melted butter and chopped parsley. Sprinkle evenly over the macaroni mixture.

Bake
Bake in the preheated oven for 25-30 minutes until the top is golden brown and the cheese is bubbly. Remove from the oven and let cool for a few minutes before serving.
