Burger Preparation

Form the Patties
Divide the ground beef into two equal portions, each weighing approximately 0.5 pounds. Gently shape each portion into a patty that is slightly larger than the diameter of the brioche buns, as they will shrink while cooking.

Cook the Patties
Preheat a grill or a skillet over medium-high heat. Once hot, place the patties on the grill or skillet. Cook for about 4-5 minutes on one side. Flip the patties, and place a slice of Wild Bill cheese on each patty. Cook for another 3-4 minutes or until the internal temperature reaches 160°F (71°C) for medium doneness.

Make the Aioli
In a bowl, combine the mayonnaise, Cajun seasoning, minced garlic, and lemon juice. Mix well until all ingredients are thoroughly combined. Adjust seasoning if necessary.
Cajun Fries Preparation

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips, resembling fries.

Season and Bake the Fries
In a large bowl, toss the potato strips with olive oil, Cajun seasoning, and salt. Spread the fries in a single layer on a baking sheet. Bake in a preheated oven at 425°F (220°C) for about 25-30 minutes or until golden brown and crispy, flipping halfway through.

Build the Burger
On the bottom half of each toasted brioche bun, spread a generous amount of Cajun aioli. Add the lettuce, followed by the cooked patty with melted cheese. Top with tomato slices and onion slices, then finish with the top half of the brioche bun.
