Preheat the Oven

Preheat your oven to 180°C (350°F) and prepare your ramekins by greasing them with butter and dusting with cocoa powder, ensuring even coverage.

Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) until smooth. Stir occasionally to ensure even melting.

Mix the Batter

In a separate mixing bowl, whisk together the granulated sugar and eggs until light and fluffy. Add the melted chocolate and butter mixture, vanilla extract, and a pinch of salt. Stir until well combined.

Add Flour

Sift the all-purpose flour into the chocolate mixture and gently fold until just incorporated. Be careful not to overmix.

Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling them about 3/4 full.

Bake

Place the ramekins on a baking tray and bake in the preheated oven for about 10-12 minutes, or until the edges are firm but the centre is still soft.

Remove the fondants from the oven and let them cool for 1 minute. Run a knife around the edges, then carefully invert them onto individual plates. Serve immediately, optionally with a scoop of vanilla ice cream or a dusting of powdered sugar.
