Blackened Mahi Mahi

Peppered White Rice

Method

Blackened Mahi Mahi

  1. 1

    Prepare the Mahi Mahi

Pat the mahi mahi fillets dry with paper towels. Season both sides generously with the blackening spice mix.

  2. 2

    Cook the Mahi Mahi

Heat olive oil in a skillet over medium-high heat. Add the seasoned mahi mahi fillets and cook for 4-5 minutes on each side until blackened and cooked through. Serve with lemon wedges.

Crawfish Étouffée

  1. 3

    Sauté the Vegetables

In a large pot, melt butter over medium heat. Add the diced onion, green bell pepper, and celery, cooking until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute.

  2. 4

    Add Crawfish and Seasonings

Stir in the crawfish tails, chicken broth, tomato paste, Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.

  3. 5

    Finish with Green Onions

Stir in the sliced green onions before serving.

Peppered White Rice

  1. 6

    Cook the Rice

In a medium saucepan, combine white rice, water, salt, and black pepper. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.

Shrimp and Mushrooms

  1. 7

    Sauté Shrimp and Mushrooms

In a skillet, melt butter over medium heat. Add minced garlic, sliced mushrooms, and shrimp. Cook until shrimp are pink and mushrooms are tender, about 5-7 minutes.

  2. 8

    Finish the Dish

Remove from heat and stir in lemon juice and chopped parsley before serving.
