Prepare Beignet Dough

Activate Yeast
In a small bowl, warm the milk until it is lukewarm (about 110°F). Sprinkle the yeast over the milk and let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine the flour, sugar, and salt. Add the yeast mixture, eggs, and melted butter. Mix until a dough forms.

Knead Dough
Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a clean cloth, and let rise in a warm place for about 1 hour or until doubled in size.

Melt Chocolate
In a microwave-safe bowl, melt the dark chocolate in 30-second increments until smooth. Let it cool slightly.

Whip Cream
In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the sugar and vanilla extract, continuing to whip until stiff peaks form.

Combine Mixtures
Gently fold the melted chocolate into the whipped cream until fully combined.

Chill Mousse
Transfer the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Fry Beignets

Prepare Oil
In a deep pot, heat the oil to 350°F (175°C).

Shape Beignets
Once the dough has risen, punch it down and roll it out to about ½ inch thick. Cut into squares or circles.

Fry Beignets
Carefully drop the dough pieces into the hot oil, frying in batches for about 2-3 minutes per side or until golden brown. Remove with a slotted spoon and drain on paper towels.

Dust with Powdered Sugar
While still warm, dust the beignets generously with powdered sugar.
