Prepare the Beef
Preheat the oven to 400°F (200°C). Rub the beef tenderloin with olive oil, salt, and black pepper on all sides. Peel and crush the garlic cloves, then insert them into small slits in the beef. Place the rosemary sprigs on top.

Sear the Beef
Heat a large oven-safe skillet over medium-high heat. Once hot, sear the beef tenderloin for about 3-4 minutes on each side until browned.

Roast the Beef
Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let rest for 10 minutes before slicing.

Mash the Potatoes
Add the butter, milk, salt, and black pepper to the drained potatoes. Use a potato masher or hand mixer to mash until smooth and creamy.

Prepare the Vegetables
Wash and cut the carrots and green beans. In a large bowl, toss the vegetables with olive oil, salt, and black pepper.

Cook the Vegetables
Heat a large skillet over medium heat. Add the seasoned vegetables and sauté for 5-7 minutes until they are tender but still crisp.
