Jambalaya

Cook the Meat
In a large pot, heat olive oil over medium heat. Add the diced andouille sausage and chicken breast, cooking until browned.

Combine Ingredients
Mix in the canned diced tomatoes, chicken broth, rice, and cajun seasoning. Bring to a boil.

Simmer
Reduce heat to low, cover the pot, and simmer for about 20 minutes until the rice is cooked. Fluff with a fork and stir in green onions before serving.
Gumbo

Make the Roux
In a large pot, heat vegetable oil over medium heat. Gradually whisk in the flour, cooking until the mixture is a dark brown color, about 15-20 minutes.

Add Proteins
Add the cooked chicken, sausage, and shrimp. Stir to combine, then add canned tomatoes and chicken broth.

Season and Simmer
Add cajun seasoning, bay leaves, and bring to a boil. Reduce heat and simmer for 30 minutes. Stir in green onions before serving.
Crawfish Etouffee

Stir in the crawfish tails and cook for 5 minutes.

Combine with Broth
Add chicken broth and cajun seasoning. Simmer for 15-20 minutes until thickened. Stir in green onions before serving.
Red Beans and Rice

Add Broth and Seasoning
Pour in chicken broth, add cajun seasoning, and bay leaves. Bring to a boil.

Reduce heat and simmer for 1-1.5 hours until beans are tender. Stir in green onions before serving.
Dirty Rice

Combine with Rice
Add long-grain rice and chicken broth, stirring to combine. Season with cajun seasoning.

Bring to a boil, then reduce heat and cover, simmering for 20-25 minutes until rice is cooked. Stir in green onions before serving.
