Method

Crust Preparation

  1. 1

    Prepare the crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated with butter.

  2. 2

    Form the crust

Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool.

Cheesecake Filling

  1. 3

    Prepare the cheesecake batter

In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add the granulated sugar and mix until well combined.

  2. 4

    Add remaining ingredients

Add the vanilla extract, sour cream, and eggs one at a time, mixing well after each addition until the batter is smooth and creamy.

  3. 5

    Combine with crust

Pour the cheesecake batter over the cooled graham cracker crust in the springform pan. Smooth the top with a spatula.

  4. 6

    Bake the cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are lightly golden. Turn off the oven and leave the cheesecake inside for an additional hour. Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours or overnight.

Bananas Foster Topping

  1. 7

    Prepare the topping

In a skillet over medium heat, melt the butter. Once melted, add the brown sugar and stir until dissolved.

  2. 8

    Add bananas and liqueurs

Add the sliced bananas to the skillet and gently stir to coat them in the butter and sugar mixture. Cook for 2-3 minutes until the bananas are warmed and slightly caramelized.

  3. 9

    Flambé the bananas

Carefully add the dark rum and dark liqueur to the skillet. Allow it to ignite (if desired) and cook for an additional minute to burn off some of the alcohol. Remove from heat.

  4. 10

    Finish with powdered sugar

Sprinkle the powdered sugar over the banana mixture, gently stirring to combine.

Assembly

  1. 11

    Assemble the cheesecake

Once the cheesecake is fully chilled, remove it from the springform pan and place it on a serving plate. Spoon the warm bananas foster topping over the cheesecake generously.

  2. 12

    Serve and enjoy

Slice the cheesecake and serve immediately, enjoying the warm banana topping over the creamy cheesecake.
