Flatbread Preparation

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, and salt.

Make Dough
Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.

Knead Dough
Transfer the dough to a floured surface and knead for about 5 minutes, until smooth.

Rest Dough
Cover the dough with a clean kitchen towel and let it rest for 30 minutes.
Assemble Lavash

Preheat Oven
Preheat your oven to 475°F (245°C).

Roll Out Dough
Divide the dough into two equal portions. Roll out each portion into a thin flatbread on a floured surface.

Add Spinach
Place the rolled flatbread on a baking sheet. Evenly distribute the fresh spinach over the surface.

Add Tomatoes
Chop the fresh tomatoes and sprinkle them over the spinach.

Add Cheese
Sprinkle the shredded mozzarella cheese and the grated Parmesan cheese evenly on top.

Season
Sprinkle smoked salt over the top of the assembled lavash to taste.

Bake
Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the cheese is melted.

Remove from the oven, let cool for a few minutes, slice, and serve warm.
