Add Garlic and Seasonings
Stir in the minced garlic, Cajun seasoning, salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
Add Beans and Broth
Add the soaked beans, bay leaves, and chicken broth to the pot. Bring to a boil, then reduce heat to low.
Simmer the Mixture
Cover and simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth if needed.
Cook the Rice
While the beans are cooking, prepare the rice according to package instructions. Typically, combine 1 cup rice with 2 cups water in a saucepan, bring to a boil, then reduce heat and simmer covered for 18-20 minutes.
Combine and Serve
Once beans are tender, remove bay leaves, and serve the red beans mixture over the cooked rice. Garnish with additional Cajun seasoning if desired.
