Crawfish Étouffée

Prepare the Trinity

Chop the onion, green bell pepper, and celery into small pieces. Mince the garlic cloves.

Cook the Vegetables

In a large skillet, melt the butter over medium heat. Add the chopped onion, bell pepper, and celery (the trinity) and sauté for about 5 minutes until the vegetables are soft. Add the minced garlic and cook for another minute.

Add the Tomato Paste

Stir in the tomato paste and let it cook for 2 minutes, stirring frequently.

Combine the Tomatoes and Stock

Add the can of diced tomatoes (with juice) and chicken stock to the skillet. Mix well.

Season the Mixture

Add the crawfish tails, Cajun seasoning, salt, and black pepper to taste. Stir the mixture and bring it to a simmer.

Add the Cream

Once the mixture is simmering, lower the heat and add the heavy cream. Stir well and let it simmer for about 10 minutes until thickened.

Garnish

Chop the green onions and parsley. Sprinkle them over the étouffée just before serving.

Prepare the Rice

Rinse the white rice under cold water until the water is clear. This helps to remove excess starch.

Cook the Trinity

In a medium saucepan, melt a small amount of butter (or oil) over medium heat. Add the chopped green bell pepper, onion, and celery. Sauté for about 3-4 minutes until softened.

Add the Rice and Stock

Add the rinsed rice to the saucepan and stir to coat it with the vegetable mixture. Pour in the crawfish stock or water, and bring to a boil.

Season the Rice

Add salt, black pepper, and Cajun seasoning to the rice. Stir well.

Simmer the Rice

Reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes until the rice is tender and has absorbed the liquid.

Fluff and Serve

Once the rice is cooked, fluff it with a fork and stir in the parsley. Serve it alongside the crawfish étouffée.
