Prepare Gumbo

Cook the Vegetables

In a large pot, heat olive oil over medium heat. Add diced onion, bell pepper, celery, and minced garlic. Sauté until the vegetables are soft, about 5-7 minutes.

Add Chicken and Sausage

Stir in the smoked chicken and sliced Cajun sausage. Cook for another 5 minutes, allowing flavors to meld.

Add Broth and Seasonings

Pour in the chicken broth, add bay leaves, and Cajun seasoning. Bring the mixture to a boil, then reduce heat to a simmer.

Add Seafood

After simmering for 30 minutes, add shrimp and crawfish tails. Let it cook for an additional 10 minutes until the seafood is cooked through.

Adjust Seasoning

Taste the gumbo and adjust seasoning if necessary. Remove bay leaves before serving.

Prepare Dirty Rice

Cook the Meat

In a separate pan, brown the ground beef or pork over medium heat until fully cooked. Drain excess fat.

Cook the Vegetables

Add diced onion, green bell pepper, celery, and minced garlic to the meat. Sauté until the vegetables are soft.

Cook the Rice

Stir in the long-grain rice, chicken broth, salt, black pepper, and Cajun seasoning. Bring to a boil, then reduce heat to low.

Simmer

Cover the pot and let it simmer for about 20 minutes or until the rice is tender and has absorbed the liquid.
