Cook Pasta

    Boil Water

    In a large pot, bring water to a rolling boil. Add a pinch of salt to the water.

    Cook Pasta

    Add the pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside. Do not rinse.

Prepare Vegetables

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

    Add Vegetables

    Add the zucchini, bell pepper, carrot, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

    Add Spinach

    Stir in the fresh spinach and cook for another 2 minutes until wilted.

Combine and Serve

    Mix Pasta and Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss well to combine.

    Season

    Season with salt and black pepper to taste. Add the grated Parmesan cheese and toss again until evenly distributed.

    Serve

    Serve immediately while hot, garnished with extra Parmesan cheese if desired.
