Olive Salad Preparation

Make the Olive Salad
In a medium bowl, combine the chopped green olives, chopped black olives, finely chopped celery, chopped red bell pepper, and minced garlic.

Mix the dressing
In a separate small bowl, whisk together the red wine vinegar, olive oil, dried oregano, and ground black pepper.

Combine
Pour the dressing over the olive mixture and stir well to combine. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
Sandwich Assembly

Slice the Focaccia
Cut the focaccia bread in half horizontally to create a top and bottom for the sandwich.

Layer the Ingredients
On the bottom half of the focaccia, layer the Genoa salami, followed by the ham, and then the provolone cheese.

Add the Olive Salad
Spoon a generous amount of the olive salad over the provolone cheese.

Top and Press
Place the top half of the focaccia on the sandwich and press down gently. You can wrap it in foil for a few minutes to help meld the flavors together.
