Prepare Pizza Dough

Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Make Dough
In a large bowl, mix flour and salt. Add the yeast mixture and olive oil. Stir until a rough dough forms.

Knead Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise for about 1 hour or until doubled in size.

Add Flour
Once melted, whisk in the flour and cook for 1-2 minutes until lightly golden.

Add Milk
Gradually whisk in the milk and bring the mixture to a simmer. Cook until thickened, about 5 minutes.

Add Cheese and Seasoning
Stir in Gruyere cheese, nutmeg, salt, and black pepper until the cheese is melted and smooth.
Assemble Pizza

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape Dough
Punch down the risen dough and roll it out to fit a pizza stone or baking sheet.

Add Sauce and Toppings
Spread the Mornay sauce evenly over the base. Top with shredded turkey, diced tomatoes, crumbled bacon, chopped green onions, and shredded mozzarella.

Place the pizza in the preheated oven and bake for 12-15 minutes, or until the cheese is bubbly and golden.
