Add Milk
Gradually whisk in the milk, continuing to whisk to prevent lumps. Cook for about 5 minutes, or until the sauce thickens and coats the back of a spoon.

Incorporate Cheese and Seasoning
Remove the saucepan from heat and stir in the Gruyère cheese and Parmesan cheese until melted. Season with salt, black pepper, and nutmeg. Set aside.

Prepare the Bacon
Preheat the oven to 400°F (200°C). Place the bacon strips on a baking sheet lined with parchment paper and bake for about 15 minutes, or until crispy. Remove from the oven and crumble.

Toast the Bread
While the bacon is baking, toast the Texas toast slices until golden brown.

Assemble the Hot Brown
On each slice of toasted bread, layer slices of roasted turkey. Pour the Mornay sauce generously over the turkey. Top with crumbled bacon, sliced tomatoes, and chopped green onions.

Bake
Return the assembled Hot Browns to the oven and bake for 10 minutes or until the sauce is bubbly and golden brown.

Sprinkle with paprika before serving. Serve hot and enjoy your Louisville classic!
