For the Salmon

Method

For the Salmon

  1. 1

    Prepare the Marinade

In a small bowl, mix together olive oil, salt, black pepper, and lemon juice. This will be used to marinate the salmon.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Grill the Salmon

Preheat the grill to medium-high heat. Remove the salmon from the marinade and place it on the grill. Grill for about 5-7 minutes per side or until the salmon flakes easily with a fork.

For the Mango Jalapeño Salsa

  1. 4

    Mix the Salsa Ingredients

In a medium bowl, combine diced mango, chopped jalapeño, finely chopped red onion, chopped cilantro, lime juice, and salt. Stir gently to combine all the ingredients.

  2. 5

    Chill the Salsa

Cover the bowl and let the salsa sit in the refrigerator for at least 15 minutes to allow the flavors to meld.

For the Vegetable of the Day

  1. 6

    Prepare the Vegetables

Wash and chop the seasonal vegetables into bite-sized pieces.

  2. 7

    Season and Sauté

In a skillet, heat olive oil over medium heat. Add the chopped vegetables, salt, and black pepper. Sauté for about 5-7 minutes or until the vegetables are tender yet crisp.
