Method

Prepare the Pizza Dough

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour and salt. Pour in the yeast mixture and olive oil. Stir until a dough forms.

    Knead Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let it Rise

    Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Vegetables

    Slice Vegetables

    While the dough is rising, slice the zucchini, yellow squash, red onion, and mushrooms into thin pieces.

    Sauté Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced zucchini, squash, red onion, and mushrooms. Sauté for about 5-7 minutes until softened. Add black pepper and dried oregano. Stir to combine.

    Prepare Roasted Red Peppers

    If using whole roasted red peppers, slice them into strips. If using jarred, drain and set aside.

Assemble and Bake Pizza

    Preheat Oven

    Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

    Roll Out Dough

    Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a circular shape about 12 inches in diameter.

    Top the Pizza

    Transfer the rolled-out dough to a pizza stone or baking sheet. Spread the sautéed vegetables evenly over the dough, then crumble goat cheese on top, followed by sprinkling mozzarella cheese.

    Bake the pizza in the preheated oven for about 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.

    Remove the pizza from the oven and let it cool for a few minutes before slicing. Serve warm.
