Prepare the Vegetables
Wash and slice the zucchini and yellow squash into thin rounds. Dice the red onion into small pieces. Clean and slice the mushrooms if using whole mushrooms. Drain and chop the roasted red peppers.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 2-3 minutes until they become translucent. Then add the zucchini, yellow squash, and mushrooms. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are slightly tender.

Add Roasted Red Peppers
Stir in the chopped roasted red peppers and sprinkle with salt, black pepper, and dried Italian herbs. Cook for another 2-3 minutes until everything is heated through.

Add Goat Cheese
Crumble the goat cheese over the sautéed vegetables, and gently stir to combine. Allow the cheese to melt slightly into the mixture for about 1-2 minutes.

Plate the Dish
Transfer the goat cheese and vegetable mixture to a serving dish. You can serve it warm as a side dish or over a bed of greens for a light main course.
