Method

Filet Mignon

  1. 1

    Prepare the Steaks

Take the filet mignon steaks out of the refrigerator and allow them to come to room temperature for about 30 minutes before cooking.

  2. 2

    Season the Steaks

Rub the steaks with olive oil, then season generously with salt, black pepper, and fresh rosemary on both sides.

  3. 3

    Sear the Steaks

In a heavy skillet or cast-iron pan, heat over medium-high heat. Once hot, add the steaks and sear for about 4 minutes on each side for medium-rare, or until they reach your desired doneness.

  4. 4

    Add Butter

During the last minute of cooking, add butter to the pan and baste the steaks with the melted butter.

  5. 5

    Rest the Steaks

Remove the steaks from the skillet and let them rest for about 5 minutes before serving.

Garlic Mashed Potatoes

  1. 6

    Prepare the Potatoes

Peel and cut the russet potatoes into chunks. Add them to a large pot of salted water and bring to a boil.

  2. 7

    Boil the Potatoes

Once boiling, add the garlic cloves and cook the potatoes until fork-tender, about 15-20 minutes.

  3. 8

    Drain and Mash

Drain the potatoes and garlic, then return them to the pot. Add butter, heavy cream, salt, and black pepper, and mash until smooth and creamy.

Asparagus

  1. 9

    Prepare the Asparagus

Trim the tough ends off the asparagus spears and rinse them under cold water.

  2. 10

    Season and Roast

Preheat the oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and black pepper. Spread them out on a baking sheet.

  3. 11

    Roast the Asparagus

Roast in the preheated oven for about 12-15 minutes, or until tender and slightly crispy.
