Calamari Preparation

Clean and Cut Calamari
Rinse the calamari under cold water. Remove the heads and innards, and cut the bodies into rings about 1/2 inch thick.

Prepare Breading Station
In a shallow bowl, mix together the flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk the egg and milk together. Place the breadcrumbs in a third bowl.

Bread the Calamari
Dip each calamari ring into the flour mixture, then into the egg mixture, and finally coat it with breadcrumbs. Ensure each piece is evenly coated.

Fry the Calamari
Fry the calamari in batches, being careful not to overcrowd the pot. Cook for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, dried oregano, salt, black pepper, and crushed red pepper flakes. Bring to a simmer.

Simmer Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish Sauce
Stir in fresh basil just before serving. Adjust seasoning to taste.
