Braised Short Rib

    Sear the Short Ribs

    Preheat your oven to 300°F (150°C). In a large Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove from the pot and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent, about 3-5 minutes.

    Add Broth and Seasoning

    Add Cajun seasoning, beef broth, bay leaves, and return the short ribs to the pot. Bring to a simmer.

    Braise in the Oven

    Cover the pot with a lid and transfer it to the preheated oven. Braise for about 3 hours, or until the meat is tender and easily falls off the bone.

    Shred the Meat

    Once cooked, remove the short ribs from the pot and shred the meat using two forks. Discard the bones and bay leaves. Return the shredded beef to the pot and stir to combine with the remaining juices.

Caramelized Onions

    Cook the Onions

    In a skillet, melt the butter over medium heat. Add the sliced yellow onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.

Melt Assembly

    Prepare the Buns

    Slice the brioche buns in half and lightly toast them if desired.

    Layer the Ingredients

    On the bottom half of each bun, layer shredded braised short rib, a slice of Wild Bill's cheese, a sprinkle of mozzarella cheese, caramelized onions, and banana peppers.

    Melt the Cheese

    Place the assembled sandwiches on a baking sheet and broil in the oven for 2-3 minutes until the cheese is melted and bubbly.

    Serve

    Remove from the oven, top with the other half of the brioche bun, and serve immediately.
