Prepare the Potatoes
Peel and cut the potatoes into thin slices or wedges. Rinse them in cold water and pat them dry.

Fry the Potatoes
Heat vegetable oil in a frying pan over medium-high heat. Add the potatoes and fry until golden and crispy, about 10-15 minutes. Drain on paper towels and season with salt.

Sear the Veal Chops
Season the veal chops with salt and pepper. In a large skillet, heat olive oil over high heat. Add the veal chops and sear for about 4-5 minutes on each side until browned and cooked to your desired doneness.

Make the Tomato Sauce
In the same skillet, reduce the heat to medium, add minced garlic, and sauté for 1 minute. Then add the diced tomatoes. Cook for about 5-7 minutes until the sauce thickens. Stir in fresh basil leaves.

Combine and Serve
Place the seared veal chop on a plate, top with tomato sauce and slices of fresh mozzarella. Serve with fried potatoes on the side.
