Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create fries. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the prepared fries in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt to taste.

    Make the Spicy Aioli

    In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, and red pepper flakes. Adjust seasoning to taste.

    Make the Horseradish Sauce

    In another bowl, combine the sour cream, horseradish, and chopped parsley. Mix well and adjust seasoning as desired.

    Serve

    Serve the hot fries with the trio of aioli on the side: spicy aioli, horseradish sauce, and any additional dipping sauces you prefer.
