Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Vegetables
Peel and chop the beets, carrots, celery root, parsnips, and turnips into uniform pieces, about 1-inch cubes.

Season the Vegetables
In a large bowl, combine the chopped vegetables. Drizzle with olive oil, then sprinkle with salt, black pepper, and fresh rosemary. Toss to coat evenly.

Roast the Vegetables
Spread the seasoned vegetables in a single layer on a baking sheet. Roast in the preheated oven for 30-40 minutes, stirring halfway through, until the vegetables are tender and caramelized.

Remove from the oven, let cool slightly, and serve warm as a side dish.
