Gelato Preparation Steps

    Prepare Vanilla Gelato Base

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar dissolves and the mixture is steaming but not boiling. In a separate bowl, whisk the egg yolks until light in color. Slowly pour the warm milk mixture into the egg yolks, whisking constantly to temper the eggs. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon. Remove from heat and stir in the vanilla extract. Allow the mixture to cool, then refrigerate until chilled.

    Prepare Chocolate Gelato

    Once the vanilla gelato base is chilled, take half of the base and whisk in the cocoa powder until fully incorporated. Refrigerate until ready to churn.

    Prepare Pistachio Gelato

    For the pistachio gelato, blend the remaining vanilla gelato base with the chopped pistachios in a food processor until smooth. Strain through a fine-mesh sieve to remove any solid pieces, then refrigerate until ready to churn.

    Churn the Gelato

    Churn each flavor separately in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to airtight containers and freeze for at least 4 hours or until firm.
