Focaccia Preparation

    Activate Yeast

    In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Make Dough

    In a large bowl, mix the flour and salt. Create a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.

    Knead

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare Topping

    While the dough is rising, prepare the tomato sauce by simmering your choice of crushed tomatoes, garlic, salt, and herbs in a pot for about 15 minutes.

    Shape Focaccia

    Once the dough has risen, punch it down and transfer it to a greased baking sheet. Stretch it out to fit the sheet and create dimples on the surface.

    Add Toppings

    Spread the prepared tomato sauce evenly over the dough and sprinkle with shredded mozzarella cheese.

    Second Rise

    Cover the focaccia and let it rise again for about 30 minutes.

    Bake

    Preheat the oven to 425°F (220°C). Bake for 20-25 minutes or until golden brown and the cheese is bubbling.

    Remove from the oven, let it cool for a few minutes, then cut into squares and serve warm.
