Pastry Dough

Method

Preparation

  1. 1

    Prepare the Dough

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy. In a large bowl, mix flour and salt. Make a well in the center and add the yeast mixture, milk, and egg. Mix until a dough forms.

  2. 2

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place it in a lightly oiled bowl, cover it with a damp cloth, and let it rise for about 1 hour in a warm place.

  3. 3

    Prepare the Butter Layer

While the dough is rising, prepare the butter. Place the unsalted butter between two sheets of parchment paper and pound it into a rectangle about 1/2 inch thick. Chill in the refrigerator.

  4. 4

    Incorporate the Butter

Once the dough has risen, roll it out into a rectangle about 1/2 inch thick. Place the chilled butter in the center and fold the dough over the butter, sealing the edges. Roll it out again into a rectangle and fold it into thirds. Repeat this process 3-4 times, chilling the dough between folds.

  5. 5

    Shape the Croissants

Roll out the dough into a large rectangle and cut it into triangles. Starting from the base of the triangle, roll the dough towards the tip to form a croissant shape. Place on a baking sheet lined with parchment paper.

  6. 6

    Final Rise

Let the shaped croissants rise for another hour until they are puffy.

  7. 7

    Bake

Preheat the oven to 400°F (200°C). Bake the croissants for 15-20 minutes until golden brown. Let them cool slightly before serving.
