    Prepare the Dough

    In a large mixing bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until foamy. Add the flour, salt, and olive oil to the yeast mixture and stir until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Focaccia

    Once the dough has risen, punch it down and transfer it to a greased baking sheet or a baking pan. Gently stretch and press the dough out to fill the pan. Cover with a cloth and let it rise again for about 20-30 minutes.

    Preheat and Top

    Preheat your oven to 425°F (220°C). Once the dough has risen again, use your fingers to create dimples all over the surface. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top. Add fresh rosemary and sprinkle with sea salt.

    Bake the Focaccia

    Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown and the cheese is bubbly. Remove from the oven and let it cool slightly before slicing.
