Prepare the Beef
Wrap the beef tenderloin in plastic wrap and freeze for about 1 hour until firm. This will make it easier to slice thinly.

Using a sharp knife, slice the beef tenderloin as thinly as possible. Arrange the slices on a large serving platter, slightly overlapping.

Prepare the Dressing
In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, sea salt, and black pepper.

Scatter the baby arugula over the beef slices and drizzle the dressing over the top.
