Prepare the Potatoes
Peel and cut the potatoes into wedges or slices. Heat oil in a frying pan over medium heat and fry the potatoes until golden and crispy. Season with salt and set aside.

Cook the Steak
Season the New York strip steaks with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add the steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and keep warm.

Make the Sauce
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the diced tomatoes, capers, and oregano. Cook for 5-7 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

Serve
Place the seared steaks on a plate and spoon the tomato-caper sauce over the top. Serve with the fried potatoes on the side.
