    Prepare the steak

    Remove the porterhouse steak from the refrigerator and let it come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

    Grill the steak

    Preheat your grill to high heat. Once hot, place the steak on the grill and cook for about 4-5 minutes on each side for medium-rare, depending on the thickness. Use a meat thermometer for accuracy (130-135°F for medium-rare).

    Rest the steak

    Remove the steak from the grill and let it rest for 10 minutes. Drizzle with extra virgin olive oil before slicing.

    Prepare the fried potatoes

    While the steak is resting, peel and cut the potatoes into wedges. Heat oil in a frying pan over medium heat and fry the potatoes until golden brown and crispy, about 15-20 minutes. Season with salt to taste.

    Sauté the spinach

    In another pan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
