    Prepare the Asparagus

    Trim the tough ends off the asparagus and set aside.

    Sauté the Asparagus

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the asparagus and sauté for about 5-7 minutes until tender but still crisp. Season with salt and pepper.

    Add Sage Butter

    In the same skillet, push the asparagus to one side and add the remaining butter. Once melted, add the sage leaves and cook for another 2 minutes until the sage is crispy.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side up in a little butter or oil until the whites are set but the yolks are still runny.

    Assemble the Dish

    Serve the sautéed asparagus on a plate, sprinkle with grated Parmesan cheese, and top with the fried egg. Finish with additional salt and pepper to taste.
