    Prepare the Dough

    In a small bowl, dissolve yeast in warm milk and let it sit for 5 minutes. In a large bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.

    Combine Ingredients

    Add the yeast mixture and beaten eggs to the flour mixture. Stir until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

    Rise the Dough

    Place the dough in a greased bowl, cover with a towel, and let it rise in a warm place for 1 hour or until doubled in size.

    Shape the Croissants

    Roll out the dough into a rectangle. Cut into triangles. Place a small amount of almond paste at the wide end of each triangle and roll up tightly.

    Second Rise

    Place the rolled croissants on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

    Bake

    Preheat the oven to 375°F (190°C). Brush the tops of the croissants with beaten egg and sprinkle with sliced almonds. Bake for 20-25 minutes until golden brown.
