    Wash and peel the Russet potatoes. Using a mandoline or a sharp knife, slice the potatoes thinly (about 1/8 inch thick).

    Place the potato slices in a large bowl of cold water for at least 30 minutes. This helps to remove excess starch and will make the chips crispier.

    Dry the Potatoes

    After soaking, drain the water and lay the potato slices on a clean kitchen towel or paper towels. Pat them dry to remove moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
