    Prepare the Burger Patties

    In a large bowl, mix the ground beef with salt and black pepper until well combined. Divide the mixture into four equal portions and shape them into burger patties, making sure they are slightly larger than the buns as they will shrink while cooking.

    Heat the Beef Tallow

    In a large, deep skillet or pot, heat the beef tallow over medium heat until it reaches 350°F (175°C). Use a candy thermometer for accuracy. If using vegetable oil, ensure it reaches the same temperature.

    Fry the Burgers

    Carefully place the burger patties in the hot tallow, frying them for about 3-4 minutes on each side until they are golden brown and cooked to your desired level of doneness. Use a slotted spoon to remove them and drain on paper towels.

    Add Cheese

    During the last minute of frying, place a slice of American cheese on each patty, allowing it to melt slightly.

    Assemble the Burgers

    On the bottom half of each hamburger bun, spread a tablespoon of yellow mustard. Place the fried burger patties with melted cheese on top, followed by the chopped onions and sliced pickles. Top with the other half of the bun.
