Method

Preparation and Roasting

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Prepare the Portobello Mushrooms

Clean the portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and gills if desired.

  3. 3

    Season the Mushrooms

Drizzle the olive oil over the mushrooms, ensuring they are well coated. Season with salt and black pepper.

  4. 4

    Roast the Mushrooms

Place the mushrooms on a baking sheet, gill side up, and roast in the preheated oven for 20-25 minutes, or until tender.

Assembling the Salad

  1. 5

    Prepare the Mixed Greens

In a large serving bowl, place the mixed greens as the base of your salad.

  2. 6

    Add Roasted Mushrooms

Once the mushrooms are done roasting, remove them from the oven and let them cool slightly. Slice them and place them on top of the mixed greens.

  3. 7

    Add Toppings

Crumble the goat cheese over the salad, sprinkle the toasted sunflower seeds, and drizzle pesto on top.

  4. 8

    Serve

Toss the salad gently to combine all ingredients and serve immediately.
