Method

Preparation

  1. 1

    Shuck the Oysters

Carefully shuck the fresh Louisiana oysters, removing them from the shell. Keep the oysters in a bowl, discarding the shells.

  2. 2

    Prepare the Breading Station

In one bowl, combine the all-purpose flour, cornmeal, salt, black pepper, paprika, and garlic powder. In another bowl, whisk together the eggs and milk until fully combined.

Breading

  1. 3

    Coat the Oysters

Dip each oyster into the flour mixture, ensuring it is fully coated. Then, immerse it into the egg and milk mixture, followed by returning it to the dry flour mixture for a second coating.

Frying

  1. 4

    Heat the Oil

In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Oysters

Carefully place the breaded oysters into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes, or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.

Serving

  1. 6

    Plate and Serve

Arrange the fried oysters on a serving platter. Serve hot with lemon wedges and hot sauce on the side for dipping.
