Preparation of Shrimp

Clean the Shrimp
Rinse the jumbo Gulf shrimp under cold water and remove the shells and tails, leaving the shrimp intact.

Pat Dry
Use paper towels to pat the shrimp dry to ensure the batter adheres properly.
Making the Batter

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, paprika, salt, and black pepper. Whisk together until well combined.

Add Water
Gradually add cold water to the dry ingredients, whisking until the batter is smooth and free of lumps. The batter should have a thick consistency.
Frying the Shrimp

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Shrimp
Dip each shrimp into the batter, ensuring they are fully coated. Allow excess batter to drip off.

Fry the Shrimp
Carefully place the battered shrimp into the hot oil in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes or until golden brown.

Drain the Shrimp
Using a slotted spoon, remove the shrimp from the oil and transfer them to a paper towel-lined plate to drain excess oil.
