Method

Fish Preparation

  1. 1

    Prepare the Catfish

Rinse the farm-raised catfish fillets under cold water and pat them dry with paper towels. Cut the fillets into thin strips, approximately 1 inch wide.

  2. 2

    Season the Fish

In a bowl, combine salt, black pepper, paprika, and garlic powder. Sprinkle the seasoning mixture evenly over the catfish strips, ensuring they are well coated. Let them marinate for about 15 minutes.

Breading

  1. 3

    Prepare the Breading Station

In a shallow dish, add the corn flour (cornmeal). In another bowl, beat the eggs with the milk until well combined.

  2. 4

    Bread the Catfish

Dip each seasoned catfish strip first into the egg and milk mixture, allowing any excess to drip off, then roll it in the corn flour until fully coated. Place the breaded catfish strips on a plate.

Frying

  1. 5

    Heat the Oil

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Fry the Catfish

Carefully add the breaded catfish strips to the hot oil, being careful not to overcrowd the pan. Fry them for about 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the fried catfish and transfer them to a paper towel-lined plate to drain excess oil.
