Prepare the Filet
Take the filet mignon out of the refrigerator and allow it to come to room temperature for about 30 minutes before cooking. This will help it cook evenly.

Season the Filet
Rub the filet mignon with olive oil, then season generously with salt and freshly ground black pepper on all sides.
Cooking

Preheat the Pan
Heat a heavy skillet (preferably cast iron) over medium-high heat for about 5 minutes until very hot.

Sear the Filet
Add the seasoned filet to the hot skillet. Sear for about 4-5 minutes on one side without moving it to develop a nice crust.

Check for Doneness
Use a meat thermometer to check the internal temperature: 125°F for rare, 135°F for medium-rare, and 145°F for medium.

Rest the Filet
Remove the filet from the skillet and let it rest on a plate for 5-10 minutes before slicing. This allows the juices to redistribute.
