Sautéed Fish

    Prepare the Fish

    Rinse the fish fillets under cold water and pat dry with paper towels.

    Season the Fish

    Season both sides of the fish fillets with salt, black pepper, and a drizzle of lemon juice.

    Sauté the Fish

    In a large skillet, heat olive oil over medium-high heat. Add the fish fillets and sauté for about 3-4 minutes on each side, or until cooked through and golden brown. Remove from skillet and set aside.

Grilled Jumbo Shrimp

    Prepare the Shrimp

    In a bowl, combine jumbo shrimp, minced garlic, paprika, salt, and black pepper. Toss to coat.

    Grill the Shrimp

    Preheat the grill to medium heat. Thread shrimp onto skewers and grill for 2-3 minutes on each side until they turn pink and opaque. Remove from grill and set aside.

Garlic Beurre Blanc

    Prepare the Sauce Base

    In a saucepan, combine dry white wine and shallots over medium heat. Bring to a simmer and reduce until about 2 tablespoons of liquid remain.

    Finish the Sauce

    Lower the heat and whisk in heavy cream. Gradually add cold cubed butter, whisking continuously until the sauce is emulsified. Season with salt and white pepper. Remove from heat.

Hollandaise Sauce

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together egg yolks and lemon juice until frothy.

    Heat the Mixture

    Place the bowl over a pot of simmering water (double boiler). Continue whisking until the mixture thickens and doubles in volume.

    Add the Butter

    Slowly drizzle in the melted butter while whisking continuously, until the sauce is thick and creamy. Season with salt and cayenne pepper to taste.
