Seasonal Vegetables

Method

Prepare the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, salt, and black pepper. Place the salmon fillets in the marinade and let them sit for at least 15 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

Grill the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, place the marinated salmon fillets skin-side down on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Prepare the Vegetables

  1. 4

    Chop the Vegetables

While the salmon is marinating, chop the asparagus, bell pepper, and zucchini into bite-sized pieces. Mince the garlic cloves.

  2. 5

    Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped vegetables and minced garlic. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp. Season with salt and black pepper to taste.

Serve

  1. 6

    Plate the Dish

Once the salmon is grilled and the vegetables are sautéed, plate the salmon fillets with a generous serving of the seasonal vegetables on the side. Optionally, drizzle some additional lemon juice over the salmon before serving.
