Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, whisk the milk, egg, melted butter, and vanilla extract together until fully blended.

Cooking

  1. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients bowl. Stir gently with a spatula until just combined. Be careful not to overmix; some lumps are okay.

  2. 4

    Preheat Skillet

Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or cooking spray.

  3. 5

    Cook Hotcakes

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2 minutes or until golden brown.

  4. 6

    Repeat Cooking

Continue with the remaining batter, adjusting the heat as necessary and adding more butter or spray to the skillet.

Serving

  1. 7

    Serve Hotcakes

Serve the hotcakes warm with a drizzle of maple syrup and a handful of mixed berries on top.
