Chicken Preparation
- 1
Marinate the Chicken
In a bowl, combine the buttermilk, salt, black pepper, garlic powder, and paprika. Add the chicken breasts and coat them well. Cover and marinate in the refrigerator for at least 1 hour or overnight for best results.
- 2
Prepare the Breading Station
Set up a breading station with three bowls: one with flour, one with cornstarch, and one with beaten eggs. Season the flour and cornstarch with salt and pepper.
- 3
Bread the Chicken
Remove the chicken from the marinade. First, dredge each piece in flour, shaking off the excess. Then dip into the beaten eggs, and finally coat evenly with cornstarch. Set aside on a plate.
- 4
Fry the Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded chicken pieces. Fry for 5-7 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Slaw Preparation
- 5
Make the Slaw
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss to combine and set aside to let the flavors meld.
Assembly
- 6
Assemble the Sandwich
Toast the burger buns lightly. Place a lettuce leaf on the bottom bun, followed by the crispy chicken piece, a generous portion of slaw, and pickles. Top with the other half of the bun.
